Ingredients

Oatmeal Banana Pancakes

  • 1 Banana ripe
  • ½ cup Rolled oats
  • ½ cup Cottage cheese
  • 2 Eggs
  • ½ tsp Baking powder
  • ½ tsp Vanilla extract
  • pinch Salt
  • tsp ground Cinnamon
  • Milk as needed to adjust consistency
  • 1 TBSP Butter melted, plus more for cooking
  • Maple syrup for serving

Milk

  • 16 oz Milk cold

Instructions

  • Prepare the pancake batter: In a blender, combine the banana, rolled oats, cottage cheese, eggs, baking powder, vanilla extract, salt, cinnamon, and 1 TBSP of melted butter. Blend until almost smooth. Add milk, if needed, to achieve a thick, but pourable consistency.
  • Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Add a small amount of butter to lightly coat the surface before cooking the pancakes.
  • Cook the Pancakes: Pour approximately ¼ cup of batter onto the preheated skillet for each pancake. Cook for 3 - 4 minutes, or until bubbles form on the surface and the edges begin to set. Flip and cook for another 2 - 3 minutes, until the pancakes are golden brown.
  • Serve: Remove the pancakes from the skillet and keep warm. Repeat with remaining batter. Adding more butter to the pan as needed for cooking.
  • Pour the milk into glasses for serving.
  • Serve the warm pancakes with maple syrup drizzled on top and a glass of cold milk to drink.
