Ingredients
Oatmeal Banana Pancakes
- 1 Banana ripe
- ½ cup Rolled oats
- ½ cup Cottage cheese
- 2 Eggs
- ½ tsp Baking powder
- ½ tsp Vanilla extract
- pinch Salt
- ⅛ tsp ground Cinnamon
- Milk as needed to adjust consistency
- 1 TBSP Butter melted, plus more for cooking
- Maple syrup for serving
Milk
- 16 oz Milk cold
Instructions
- Prepare the pancake batter: In a blender, combine the banana, rolled oats, cottage cheese, eggs, baking powder, vanilla extract, salt, cinnamon, and 1 TBSP of melted butter. Blend until almost smooth. Add milk, if needed, to achieve a thick, but pourable consistency.
- Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Add a small amount of butter to lightly coat the surface before cooking the pancakes.
- Cook the Pancakes: Pour approximately ¼ cup of batter onto the preheated skillet for each pancake. Cook for 3 - 4 minutes, or until bubbles form on the surface and the edges begin to set. Flip and cook for another 2 - 3 minutes, until the pancakes are golden brown.
- Serve: Remove the pancakes from the skillet and keep warm. Repeat with remaining batter. Adding more butter to the pan as needed for cooking.
- Pour the milk into glasses for serving.
- Serve the warm pancakes with maple syrup drizzled on top and a glass of cold milk to drink.
