Ingredients
Grilled Shrimp Po' Boys
- 8 oz Shrimp peeled and deveined, tail off
- 1 ½ tsp Cajun seasoning (or more to taste)
- ½ TBSP Extra-virgin olive oil
- ½ French baguette (about 6-inch piece per portion)
- ½ cup Romaine lettuce shredded
- 4 slices Tomato
- ½ Jalapeño pepper thinly sliced (optional for spiciness)
- 1 cup Carrot peeled and cut into 3-inch-long sticks
- 1/4 cup Ranch dressing
Remoulade
- ¼ cup Mayonnaise
- 1 TBSP Sriracha sauce (or use chili sauce)
- 1 tsp Creole mustard
- ½ tsp Horseradish (mild or hot, per preference)
- ½ tsp Worcestershire sauce
- ½ tsp Shallot minced
- 1 clove Garlic minced
- ½ Lemon juiced
Mango Lassi
- 1 ½ cups Frozen mango chopped
- ¾ cup Plain yogurt
- ¾ cup Milk
- 1 TBSP Sugar to taste
- ¼ tsp Ground cardamom
Instructions
- Grilled Shrimp Po' Boys: Season the shrimp with Cajun seasoning and toss with olive oil.
- Heat a grill to medium heat. Grill the shrimp for a couple of minutes per side until cooked through (cook to an internal temperature of 145°F (63°C)). Alternatively, cook them on a stovetop grill pan.
- Prepare the Remoulade: Whisk all the remoulade ingredients together in a bowl.
- Toast the Baguette: Lightly toast the baguette on the grill.
- Assemble the Sandwich: Layer the baguette with shredded lettuce, tomato slices, sliced peppers (optional), and shrimp. Drizzle with remoulade sauce.
- Mango Lassi: Add mango, yogurt, milk, cardamom powder, and sugar to a blender. Blend until super smooth. Adjust sweetness and consistency by adding more sugar, milk, or mango, along with a splash of water if needed. Pour into glasses.
- Serve: Plate the grilled shrimp po' boys with carrot sticks and ranch on the side. Serve alongside mango lassi.
