Ingredients
Crispy Cajun Chicken Tenders
- 8 oz Chicken tenderloins
- 1/4 tsp Salt
- Black pepper to taste
- 2 tsp Cajun seasoning
- 1/2 tsp Cayenne pepper
- 1/2 tsp Smoked paprika
- 2 Eggs beaten
- 3 cups Corn flakes cereal smashed into small pieces
- 2 TBSP Honey
- ½ cup BBQ sauce
- 2 Scallions chopped for garnish
Garlic Chili Oil Noodles
- 4 oz Lo mein noodles
- 2 TBSP Vegetable oil
- 2 TBSP Garlic finely minced
- 4 TBSP Scallions chopped
- 2 TBSP Chinese chili oil
- 2 TBSP Reduced-sodium soy sauce
- 2 TBSP Crushed tomatoes
- 1/2 cup Chicken broth
- 1 tsp Honey
- Sesame seeds for garnish
- Salt to taste
Broccolini
- 1 bunch Broccolini
- Salt to taste
Fortune Cookie
- 2 Fortune cookies
Coconut Water
- 24 oz Coconut water cold
Instructions
- Preheat the oven to 375°F (190°C).
- Transfer chicken tenderloins to a large bowl, then add salt, pepper, Cajun seasoning, cayenne pepper, and smoked paprika and mix until coated.
- Beat your eggs in a medium bowl and add cornflakes to a separate large bowl. Using your hands, crunch some of the cornflakes into smaller pieces and crumbs; this will help coat the chicken completely. Dip each chicken tender in egg wash, then coat in cornflakes, before transferring to a lined baking tray. Spray with olive oil spray all over, then bake for 15 - 20 mins.
- Cook the noodles according to package instructions.
- Heat oil over medium heat until hot. Add garlic, scallion, chili oil, soy sauce, honey, tomato puree, chicken broth, tomato paste, and honey.
- Add noodles and toss well until saucy and coated.
- Make the Broccolini: Trim the ends of the broccolini stems. Bring a pot of salted water to a boil. Add the broccolini to the boiling water and cook for 2 - 3 minutes, or until bright green and tender.
- Drain the broccolini and transfer to a plate. Season with a sprinkle of salt.
- Meanwhile, mix together the honey and BBQ sauce until fully combined.
- Dip chicken tenders in honey BBQ sauce until coated all over. Garnish with scallions,
- Serve with chili noodles, broccolini, fortune cookie, and coconut water.
