Sausage Egg and Cheese Breakfast Wrap

Ingredients

Breakfast Wrap

  • 4 Eggs
  • 2 tsp Extra-virgin olive oil
  • ½ cup Onion diced
  • ½ cup Bell pepper diced
  • 4 oz Breakfast sausage links crumbled
  • ½ cup Cheddar cheese shredded (or your choice of cheese)
  • Salt to taste
  • Black pepper to taste
  • 2 Flour tortillas

Grapefruit

  • 2 Grapefruit halved
  • ½ tsp Sugar for sprinkling

Coffee

  • Coffee
  • Your choice of creamer
  • Your choice of sweetener

Instructions

  • Crack the eggs into a bowl, add a pinch of salt and black pepper, and whisk them together.
  • Cook the Sausage: In a skillet over medium heat, add the oil and saute the onion and pepper until softened. Add in the crumbled sausage. Cook breaking it up into pieces until nicely browned and no longer pink.
  • Add in the egg and stir until the egg is cooked and no longer runny.
  • Add Cheese: Sprinkle the shredded cheese over the egg mixture. Allow it to melt for about 1 - 2 minutes while stirring gently. Season with salt and pepper to taste.
  • Assemble the Wraps: Lay out the flour tortillas. Divide the sausage, egg, and cheese mixture evenly between the two tortillas. Roll them up tightly.
  • Optional: Warm the Wraps: Place the wraps back in the skillet for 1 - 2 minutes, seam side down, until slightly crispy.
  • Prepare Coffee and Grapefruit: While the wraps are warming, brew your favorite coffee using your preferred method. Cut the grapefruit in half and sprinkle with sugar if desired.
  • Serve the breakfast wraps alongside the grapefruit halves and coffee.
