Assemble the Wraps: Lay out the flour tortillas. Divide the sausage, egg, and cheese mixture evenly between the two tortillas. Roll them up tightly.
Optional: Warm the Wraps: Place the wraps back in the skillet for 1 - 2 minutes, seam side down, until slightly crispy.
Prepare Coffee and Grapefruit: While the wraps are warming, brew your favorite coffee using your preferred method. Cut the grapefruit in half and sprinkle with sugar if desired.
Serve the breakfast wraps alongside the grapefruit halves and coffee.
