Ingredients

Broodje Haring

  • 8 oz Salt-cured herring fillets fully cooked
  • 2 Sub rolls
  • 2 TBSP Mayonnaise
  • 1 TBSP Dijon mustard
  • Salt to taste
  • Black pepper to taste
  • 1 small Onion thinly sliced
  • 2 Pickles sliced
  • 2 TBSP Fresh parsley chopped
  • 2 TBSP Fresh chives chopped
  • 2 oz Potato chips

Homemade Lemonade

  • 1 cup Lemon juice fresh squeezed
  • 16 oz Water
  • 2 TBSP Sugar use to taste
  • Ice cubes for serving

Mochi Ice cream

  • 4 Mochi ice cream optional

Instructions

  • Rinse the herring filets under cold water and pat them dry with a paper towel.
  • Slice the rolls in half and lightly toast in a toaster oven or oven broiler on low.
  • In a small bowl, mix together the mayonnaise and Dijon mustard. Season with salt and pepper to taste.
  • Spread the mayonnaise and mustard mixture on the bottom halves of the bread rolls.
  • Place a herring filet on each roll and top with sliced onions and pickles.
  • Sprinkle fresh parsley and chives over the toppings.
  • Place the top halves of the bread rolls on the sandwiches to complete the broodje haring.
  • Mix the ingredients for the lemonade. Serve over ice if desired.
  • Serve the sandwich with salt and pepper chips and homemade lemonade. Enjoy with mochi ice cream optional.
