Ingredients

Breakfast Burritos

  • 4 strips Bacon chopped
  • 1 TBSP Butter for cooking
  • ¼ cup Onion finely chopped
  • ¼ cup Bell pepper finely chopped
  • 4 Eggs beaten
  • ½ cup Cheddar cheese shredded
  • 2 Flour tortillas large
  • Salt to taste
  • Black pepper to taste

Fruit

  • 1 Apple washed, cored, and sliced
  • 1 Banana ripe, peeled and sliced

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • In a large skillet, cook bacon over medium heat until crispy (about 5 - 7 minutes), stirring occasionally.
  • Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease.
  • In the same skillet, remove excess bacon grease, leaving about 1 tablespoon in the pan. If needed, add butter.
  • Add the chopped onion and bell pepper to the skillet and cook over medium heat for 3 - 4 minutes, stirring occasionally, until softened and slightly browned.
  • Scramble the Eggs: While the vegetables are cooking, crack the eggs into a bowl and beat them together with a pinch of salt and black pepper.
  • Then pour the eggs, bacon, and cheese into the pan. Scramble the eggs gently with a spatula for about 2 - 3 minutes, until cooked through but still soft.
  • Assemble the Burritos: Warm the tortillas in the microwave for 20 - 30 seconds or in a dry skillet for about 1 minute on each side to soften.
  • Divide the scrambled egg mixture evenly between the tortillas.
  • Roll up the burritos tightly by folding in the sides and then rolling from the bottom up.
  • Serve: Cut in half if desired, with sliced fruit, and orange juice.
