Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease.
In the same skillet, remove excess bacon grease, leaving about 1 tablespoon in the pan. If needed, add butter.
Add the chopped onion and bell pepper to the skillet and cook over medium heat for 3 - 4 minutes, stirring occasionally, until softened and slightly browned.
Scramble the Eggs: While the vegetables are cooking, crack the eggs into a bowl and beat them together with a pinch of salt and black pepper.
Then pour the eggs, bacon, and cheese into the pan. Scramble the eggs gently with a spatula for about 2 - 3 minutes, until cooked through but still soft.
Assemble the Burritos: Warm the tortillas in the microwave for 20 - 30 seconds or in a dry skillet for about 1 minute on each side to soften.
Divide the scrambled egg mixture evenly between the tortillas.
Roll up the burritos tightly by folding in the sides and then rolling from the bottom up.
Serve: Cut in half if desired, with sliced fruit, and orange juice.
