Ingredients

Cucumber Water

  • 24 oz Water
  • 8 slices Cucumber

Jambon Beurre

  • 1.5 oz Brie cheese cut into pieces
  • 1 TBSP Butter softened
  • 1 TBSP Fresh chives minced
  • 1 TBSP Fresh parsley minced
  • ½ tsp Dijon mustard
  • 1 clove Garlic grated
  • Salt
  • Black pepper
  • 1 cup Arugula
  • ½ TBSP Lemon juice
  • 2 Whole wheat rolls 6-inch
  • 6 oz Deli ham low sodium

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks
  • 1/3 cup Hummus

Instructions

  • Prep all ingredients as instructed above. Leave the Brie out at room temperature to soften.
  • Mix the water and cucumber. Refrigerate until service to infuse.
  • In a small bowl, mix the butter, chives, parsley, Dijon mustard, and grated garlic until smooth. Season with salt and black pepper.
  • In a separate bowl, toss the arugula with lemon juice and season lightly with salt and black pepper.
  • Slice the whole wheat rolls lengthwise. Spread the herb butter on the inside of each roll.
  • Layer the rolls with deli ham, brie cheese, and the dressed arugula.
  • Serve the jambon beurre with carrots, hummus, and cucumber water.
