Ingredients

Cottage Cheese Toast with Tomato and Onion

  • 2 slices Sourdough bread
  • ½ cup Cottage cheese
  • 1 Tomato finely diced
  • 2 TBSP Red onion chopped
  • ½ tsp Extra virgin olive oil
  • ¼ tsp Oregano dried
  • Salt to taste
  • Black pepper to taste

With Lox

  • 2 slices Sourdough bread
  • ½ cup Cottage cheese
  • 2 oz Lox smoked salmon chopped
  • 2 TBSP Red onion chopped
  • 1 tsp Fresh dill roughly chopped
  • Salt to taste
  • Black pepper to taste

Apple Slices, Dates, Toasted Almonds, & Chia Seeds

  • 1 Apple cored and thinly sliced
  • 2 Dates pitted and chopped
  • 1 TBSP Almonds roughly chopped and toasted
  • 1 tsp Chia seeds

Matcha Green Tea

  • 16 oz Water
  • 4 tsp Matcha green tea powder
  • Honey to taste

Instructions

  • Prepare all ingredients as instructed.
  • For the almonds, heat a dry skillet on medium heat. Place almonds in the skillet and toast, watching closely and flipping so they don’t burn. Remove from skillet and allow to cool.
  • Toast bread slices until golden and crisp.
  • Spread cottage cheese evenly over the toasted bread.
  • For the tomato and onion toast, top with tomato and red onion, drizzle with olive oil, and season with oregano, salt, and black pepper.
  • For the lox toast, top with lox, red onion, fresh dill, salt, and black pepper.
  • Combine apple slices, dates, toasted almonds, and chia seeds in a bowl.
  • Heat water to about 175°F (80°C), just below boiling. Add matcha green tea powder and whisk until smooth and frothy. Sweeten with honey if desired.
  • Serve the cottage cheese toast with fruit and matcha green tea.
