Ingredients

Ground Beef

  • 8 oz Ground beef
  • 1/4 tsp Dried oregano
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • 1/2 tsp Salt

Lemon Basil Vinaigrette

  • 3 TBSP Extra-virgin olive oil
  • 1 TBSP Lemon juice
  • 1/4 cup Fresh basil
  • 1/2 tsp Dijon mustard
  • Salt to taste
  • Black pepper to taste

Bowl

  • 1/2 cup White rice rinsed
  • 1/2 pint Grape tomatoes quartered
  • 1 cup Cucumber sliced and quartered
  • 1/2 cup Red onion sliced thin
  • 1/2 cup Kalamata olives halved
  • 2 Pita bread
  • 1/2 cup Hummus
  • 1 oz Feta cheese crumbled
  • 1/4 cup Fresh parsley chopped

Lemonade

  • 16 oz Lemonade cold

Instructions

  • Rise the rice with cold water and drain thoroughly. In a saucepan, add the recommended amount of water and cook according to the directions on the package. While the rice is cooking, prep ingredients, and make the vinaigrette and beef.
  • Prep vegetables, feta, and olives for the bowl per instruction above.
  • Make the lemon vinaigrette: In a food processor or blender, blend all of the lemon vinaigrette ingredients until smooth then season with salt and pepper to taste.
  • Cook beef: Heat a skillet on medium heat. Add the ground beef, along with the oregano, cumin, garlic powder, and salt. Cook, stirring occasionally, until fully browned and evenly combined with the spices.
  • Finish the rice: Once tender, fluff with a fork and season with salt and pepper to taste.
  • Warm pita: Heat a nonstick pan on medium heat. Warm the pita on both sides. Cut into wedges.
  • Assemble bowl: Add rice and hummus to the bowl. Evenly distribute the remaining ingredients. Drizzle with the vinaigrette.
  • Serve: Enjoy the Mediterranean hummus bowl with pita and lemonade.
