Rise the rice with cold water and drain thoroughly. In a saucepan, add the recommended amount of water and cook according to the directions on the package. While the rice is cooking, prep ingredients, and make the vinaigrette and beef.
Prep vegetables, feta, and olives for the bowl per instruction above.
Make the lemon vinaigrette: In a food processor or blender, blend all of the lemon vinaigrette ingredients until smooth then season with salt and pepper to taste.
Cook beef: Heat a skillet on medium heat. Add the ground beef, along with the oregano, cumin, garlic powder, and salt. Cook, stirring occasionally, until fully browned and evenly combined with the spices.
Finish the rice: Once tender, fluff with a fork and season with salt and pepper to taste.
Warm pita: Heat a nonstick pan on medium heat. Warm the pita on both sides. Cut into wedges.
Assemble bowl: Add rice and hummus to the bowl. Evenly distribute the remaining ingredients. Drizzle with the vinaigrette.
