Ingredients
- Nonstick spray
- 4 oz Ground beef
- 1/2 tbsp Taco seasoning store bought or make your own see below
- 1/4 cup Monterey jack cheese shredded
- 1/2 cup Baby spinach drained and rinsed
- 2 Tortilla wraps
- 2 tsp Sour cream
- 2 tsp Fresh cilantro garnish
Instructions
- Preheat a panini style grill. Lightly grease with nonstick spray. (Alternatively, use a nonstick pan on medium low heat)
- Heat a nonstick pan over medium heat. Once hot, crumble in the ground beef, season with the taco seasoning, brown well while breaking it into smaller pieces. Once cooked set aside.
- Spread the cheese, ground beef, and spinach on a tortilla wrap and top in an even layer and fold in half.
- Preheat a nonstick pan over low-medium heat. Add in the oil and quesadilla and cover with a lid. Cook until one side is golden brown, about 2 - 4 minutes and flip over, cooking the other side for another 2 - 4 minutes. Remove from the pan and cut into pieces, serve with sour cream on the side and garnish with cilantro.
Notes
Make your own Taco Seasoning - Mix all ingredients together in a bowl (use what you need in the recipe to taste, save the rest in a sealed container for future use)

- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon oregano
- 1/4 teaspoon of cajun seasoning
- 1/4 teaspoon salt
