1/4cupMonterey jack cheeseshredded
1/2cupBaby spinachdrained and rinsed
2Tortilla wraps
2tspSour cream
2tspFresh cilantrogarnish
Instructions
Preheat a panini style grill. Lightly grease with nonstick spray. (Alternatively, use a nonstick pan on medium low heat)
Heat a nonstick pan over medium heat. Once hot, crumble in the ground beef, season with the taco seasoning, brown well while breaking it into smaller pieces. Once cooked set aside.
Spread the cheese, ground beef, and spinach on a tortilla wrap and top in an even layer and fold in half.
Preheat a nonstick pan over low-medium heat. Add in the oil and quesadilla and cover with a lid. Cook until one side is golden brown, about 2 - 4 minutes and flip over, cooking the other side for another 2 - 4 minutes. Remove from the pan and cut into pieces, serve with sour cream on the side and garnish with cilantro.
Notes
Make your own Taco Seasoning - Mix all ingredients together in a bowl (use what you need in the recipe to taste, save the rest in a sealed container for future use)
