Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 4 oz Ground chorizo sausage
  • 1/2 tsp Lime juice as needed
  • 6 Street Taco Shells 3 inches in diameter or any soft taco shell trimmed to 3 inches in diameter
  • 1/4 cup Monterey jack cheese shredded
  • 1/4 cup Tomato diced small
  • 1/4 cup Fresh cilantro

Sauce

  • 1/4 cup Fresh cilantro plus more for garnish
  • 1/4 cup Scallions
  • 2 tbsp Extra-virgin olive oil
  • 1 clove Garlic
  • 1/2 tsp Lime juice more if needed

Instructions

  • Heat a sauté pan over medium heat. Once hot, add the oil. Crumble in the chorizo and brown it very well while crumbling into smaller pieces until no longer pink. Stir in the lime juice to taste. Then remove from the heat.
  • Place the ingredients for the sauce in a blender or food processor. Pulse until blended well. Season with salt and pepper to taste.
  • Place the chorizo on the taco shells, top with cheese and tomato, drizzle with sauce. Garnish with cilantro.
