Ingredients
Salad
- 4 Eggs hard boiled
- 6 cups Romaine hearts washed and chopped
- 3/4 pound Deli smoked turkey breast diced
- 1 Avocados pitted and sliced
- 3/4 cup Cucumber chopped
- 1 cup Grape tomatoes halved
- 1/2 cup Red onion shaved
- 1/2 cup Black olives halved
- 1/3 cup Crumbled blue cheese
- 4 slices Crusty bread toasted
Dressing
- 1 Tsp Dijon mustard
- 1 clove Garlic grated
- 1 tbsp Lemon juiced
- 3 tbsp Extra-virgin olive oil
Instructions
- Place the eggs in a pot and cover with cold water. Bring the eggs to a boil on the stovetop. Once the water starts to boil set a timer for 6 minutes. Remove from the heat, drain the water, and run the eggs under cold water for 2 to 3 minutes to cool. Then peel and slice.
- Lay down the lettuce, top with smoked turkey, hard boiled eggs, avocado, cucumber, tomato, onion, olives, and blue cheese.
- In a bowl whisk together all the ingredients for the dressing. Season with salt and pepper.
- Dress the salad and serve with bread.
