Smoked Turkey Cobb Salad

Ingredients

Salad

  • 4 Eggs hard boiled
  • 6 cups Romaine hearts washed and chopped
  • 3/4 pound Deli smoked turkey breast diced
  • 1 Avocados pitted and sliced
  • 3/4 cup Cucumber chopped
  • 1 cup Grape tomatoes halved
  • 1/2 cup Red onion shaved
  • 1/2 cup Black olives halved
  • 1/3 cup Crumbled blue cheese
  • 4 slices Crusty bread toasted

Dressing

  • 1 Tsp Dijon mustard
  • 1 clove Garlic grated
  • 1 tbsp Lemon juiced
  • 3 tbsp Extra-virgin olive oil

Instructions

  • Place the eggs in a pot and cover with cold water. Bring the eggs to a boil on the stovetop. Once the water starts to boil set a timer for 6 minutes. Remove from the heat, drain the water, and run the eggs under cold water for 2 to 3 minutes to cool. Then peel and slice.
  • Lay down the lettuce, top with smoked turkey, hard boiled eggs, avocado, cucumber, tomato, onion, olives, and blue cheese.
  • In a bowl whisk together all the ingredients for the dressing. Season with salt and pepper.
  • Dress the salad and serve with bread.
