Ingredients
- 4 Gold Beets peeled and sliced
- 3/4 lb Sirloin steaks
- 1 Tbsp Montreal steak seasoning
- 6 cups Baby Gem Lettuce or lettuce of your choice
- 1 Watermelon Radish sliced thin into half moons or your desired shape
- 4 tbsp Goat cheese
- 4 tbsp Macadamia nuts crushed
- 4 slices Crusty bread toasted and drizzled with olive oil
DRESSING
- 3 Tbsp Extra-virgin olive oil
- 2 tsp Dijon mustard
- 2 Tbsp Lime juice
- 1 tsp Honey to taste
Instructions
- Preheat the oven to 375 degrees. Lay the beets on a foil lined baking sheet. Drizzle with oil and season with salt and pepper. Bake in the oven until tender. (Easily pierce with a fork). Then set aside to cool.
- Preheat a grill or a grill pan on medium heat.
- Generously season both sides of the steak with the steak seasoning and salt and pepper.
- Grill the steaks on both sides to your desired temperature using a thermometer. (see below) Once cooked set on a cutting board to rest for 5 minutes before slicing against the grain.
- Lay down the lettuce, top with watermelon radish, beets, goat cheese, steak, and nuts.
- In the meantime, whisk all of the ingredients for the dressing in a bowl. Season with salt and pepper to taste. Add more honey if needed.
- Dress the salad before serving with crusty bread on the side. (be careful not to overdress the salad).
