Ingredients

Parfait

  • 1 cup Blueberries plus more for garnish
  • 1 cup Blackberries plus more for garnish
  • 1 cup Raspberries plus more for garnish
  • ¼ cup Water
  • ¼ cup Granulated sugar
  • pinch Salt
  • 2 tsp Lemon zest freshly grated
  • ½ cup Granola divided
  • 1 ½ cups Yogurt your choice of flavors divided

Coffee

  • Coffee
  • Sweetener
  • Creamer

Instructions

  • To Make Berry Compote for the Parfaits: Combine berries, water, sugar, and salt in a small saucepan. Heat over medium heat until berries begin to break down and a spoon or spatula leaves a clear path on the bottom of your pot, 8 - 10 minutes. Remove from heat, stir in lemon zest, and let cool for 10 minutes.
  • Build the Parfaits: Layer granola, yogurt, and berry compote in alternating layers to each serving glass.
  • Top with fresh berries and granola for garnish.
  • Brew and prepare the coffee to your liking using your choice of sweetener and creamer.
  • Serve the parfaits with coffee and enjoy.
