In a small bowl, mix Greek yogurt with honey or maple syrup until well combined.
Add vanilla extract to the yogurt mixture and stir until incorporated.
In two serving glasses or bowls, layer the ingredients. Start with a spoonful of the yogurt mixture at the bottom.
Sprinkle a layer of granola on top of the yogurt.
Add a layer of mixed berries on top of the granola.
Repeat the layers until you reach the top of the glasses or bowls, ending with a layer of yogurt.
Sprinkle chopped nuts over the top layer of yogurt.
If desired, sprinkle a pinch of ground cinnamon over the parfait for added flavor.
Brew and prepare the coffee to your liking.
Serve the yogurt parfaits alongside coffee.
