Waldorf Chicken Sandwich
w/ sliced pinapple

- 1 Lb Chicken breast boneless skinless boneless and skinless
- 8 Leaves Romaine hearts
- 1/4 Cup Celery Diced
- 1/4 Cup Onion Diced
- 3 tbsp yogurt
- 8 slices Multigrain bread
- 1 tsp dill chopped
- 3 oz Grapes halved
- 1/2 Pineapple peeled and sliced
In a pot cover chicken with water and simmer to an internal temperature of 160°. Remove from the water and cool fully. Can be done 1 day in advance.
Dice chicken into ¼ - ½ inch pieces.
Combine chicken, celery, onion, dill, yogurt, grapes, and a pinch of salt & pepper in a bowl and mix thoroughly.
Layer chicken salad on bread with romaine leaf and serve with side of sliced pineapple.
