Waldorf Chicken Sandwich

w/ sliced pinapple

Ingredients

  • 1 Lb Chicken breast boneless skinless boneless and skinless
  • 8 Leaves Romaine hearts
  • 1/4 Cup Celery Diced
  • 1/4 Cup Onion Diced
  • 3 tbsp yogurt
  • 8 slices Multigrain bread
  • 1 tsp dill chopped
  • 3 oz Grapes halved
  • 1/2 Pineapple peeled and sliced

Instructions

  • In a pot cover chicken with water and simmer to an internal temperature of 160°. Remove from the water and cool fully. Can be done 1 day in advance.
  • Dice chicken into ¼ - ½ inch pieces.
  • Combine chicken, celery, onion, dill, yogurt, grapes, and a pinch of salt & pepper in a bowl and mix thoroughly.
  • Layer chicken salad on bread with romaine leaf and serve with side of sliced pineapple.
