- In a small bowl, toss the arugula with olive oil, lemon juice, salt, and pepper to make a simple dressing. 
- Lay the tortilla wraps flat on a clean surface. 
- Spread a generous amount of hummus on each tortilla wrap, covering the surface. 
- Layer shredded carrots, cucumber slices, tomato slices, and avocado slices on top of the hummus. 
- Drizzle the dressed arugula over the vegetables on each wrap. 
- Lay parmesan cheese wedge slices on each wrap. 
- Mix together the ingredients for the lemonade. 
- Carefully roll up the wraps, folding in the sides as you go. Slice each wrap in half diagonally if desired. 
- Serve the vegetable hummus wraps with a side of chips and pickle, and lemonade.
