Turkey Sausage, Potatoes, and Peppers

Ingredients

  • 2 Potatoes cut into same sized chunks
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 4 tbsp Extra-virgin olive oil
  • 1 pound Italian turkey sausage links
  • 1/2 Onion sliced
  • 1 Red bell pepper seeded and thinly sliced
  • 4 slices Crusty bread sliced
  • 4 tbsp Dijon mustard (optional) or more if desired

Instructions

  • Preheat the oven to 400 degrees.
  • Mix the potatoes with garlic powder, paprika, salt and pepper, and half of the olive oil in a bowl. Place on a foil lined baking sheet and cook in the oven for 20 minutes.
  • Add the sausage to the pan and then flip the potatoes using a spatula. Cook for 10 minutes and then flip the sausage and cook to an internal temperature of 155 degrees using a thermometer.
  • In the meantime in a nonstick pan heat the remaining oil on medium heat; saute the onion and pepper for 6 - 10 minutes, or until they are soft and golden brown.
  • Slice the sausage into chunks and mix with the potatoes, onions, and peppers. Serve with crusty bread and mustard if desired.
