In a bowl mix together the turkey, fennel, garlic, paprika, and a pinch of salt and pepper. Form the mixture into flat patties. Preheat a nonstick pan over medium heat with 1 tsp of oil and cook turkey patties for 3-4 minutes a side, or until golden brown. Place sausage patties on a paper towel-lined plate to drain the grease.
In the meantime, heat olive oil in a nonstick pan over medium-high heat. Crack the eggs into the pan and sprinkle with salt and pepper. Break the yolks with a spatula and cook until the top is nearly set but still glossy, then carefully fold the eggs over using a spatula and add cheese and melt.
To assemble: Place eggs with melted cheese on toast then top with a cooked sausage patty and the other slice of toast. Cut in half and serve immediately with sliced banana.
