Turkey Fruit Nut Wrap

Ingredients

Dressing

  • 1 TBSP Extra-virgin olive oil
  • 2 tsp Apple cider vinegar
  • 1/2 clove Garlic grated
  • 1/2 tsp Sugar
  • 1/8 tsp Fresh thyme minced
  • 1/4 tsp Dijon mustard

Seasoning

  • Salt to taste
  • Black pepper to taste

Salad

  • 1/2 cups Arugula
  • 1/2 cups Kale chopped
  • 2 Tortilla wraps
  • 8 oz Deli turkey breast use any leftover roasted turkey you may have in the freezer if available
  • 1/2 cup Apple diced small
  • 2 TBSP Pecans chopped
  • 1/4 cup Dried cranberries
  • 1/4 cup Red onion sliced
  • 4 TBSP Goat cheese crumbled small
  • 6 to 8 Crackers depending on size
  • 1/2 cup Hummus

Apple Cider

  • 24 oz Apple cider cold

Instructions

  • Prep the ingredients per the instructions above.
  • In a bowl whisk together all of the ingredients for the dressing and set aside until ready to use. Add sugar if needed to taste.
  • Mix the arugula and kale in a bowl. Toss well with dressing and season with salt and pepper to taste.
  • Portion the kale mixture onto the wrap. Top with turkey, apple, pecan, cranberries, onion, and goat cheese.
  • Fold in the ends and roll up tight. Cut in half.
  • Serve the wrap with crackers, hummus, and apple cider.
