Ingredients

  • 4 cups Kale chopped
  • 4 oz Deli roast beef chopped
  • 2 tbsp Red onion shaved
  • 1/4 cup Macadamia nuts coarsely chopped
  • 1/2 cup Strawberries
  • 2 tsp Crumbled blue cheese
  • 10 Grape tomatoes halved
  • 2 slices Crusty bread toasted

Dressing

  • 2 tbsp Extra-virgin olive oil
  • 1 clove Garlic grated
  • 1/2 tsp Dijon mustard
  • 1 tsp White balsamic vinegar

Instructions

  • For the dressing: Whisk together all ingredients until fully combined. Season with salt and pepper to taste. Adjust the ingredients to taste.
  • Portion the kale and top with roast beef, onion, macademia nuts, strawberries, blue cheese, and tomatoes. Serve with bread.
