- 4 cups Kale chopped
- 4 oz Deli roast beef chopped
- 2 tbsp Red onion shaved
- 1/4 cup Macadamia nuts coarsely chopped
- 1/2 cup Strawberries
- 2 tsp Crumbled blue cheese
- 10 Grape tomatoes halved
- 2 slices Crusty bread toasted
Dressing
- 2 tbsp Extra-virgin olive oil
- 1 clove Garlic grated
- 1/2 tsp Dijon mustard
- 1 tsp White balsamic vinegar
For the dressing: Whisk together all ingredients until fully combined. Season with salt and pepper to taste. Adjust the ingredients to taste.
Portion the kale and top with roast beef, onion, macademia nuts, strawberries, blue cheese, and tomatoes. Serve with bread.
