- 4 oz Deli roast beef chopped
- 2 tbsp Red onion shaved
- 1/4 cup Macadamia nuts coarsely chopped
- 1/2 cup Strawberries
- 2 tsp Crumbled blue cheese
- 10 Grape tomatoes halved
- 2 slices Crusty bread toasted
Dressing
- 2 tbsp Extra-virgin olive oil
- 1 clove Garlic grated
- 1/2 tsp Dijon mustard
- 1 tsp White balsamic vinegar
Instructions
- For the dressing: Whisk together all ingredients until fully combined. Season with salt and pepper to taste. Adjust the ingredients to taste.
- Portion the kale and top with roast beef, onion, macademia nuts, strawberries, blue cheese, and tomatoes. Serve with bread.
