Spicy Watermelon Salsa

Ingredients

  • 2 cups Watermelon rind removed and dice very small
  • 2 tbsp Extra-virgin olive oil
  • 2 tsp Lime juice use more or less to taste
  • 1 tbsp Fresh cilantro chopped
  • 2 tsp Jalapeño pepper minced (optional)
  • 1/2 tsp Honey
  • 2 oz Tortilla chips

Instructions

  • Place all ingredients into a bowl. Season with salt and pepper to taste. Refrigerate for 20 minutes before serving.
