Ingredients
- 2 cups Watermelon rind removed and dice very small
- 2 tbsp Extra-virgin olive oil
- 2 tsp Lime juice use more or less to taste
- 1 tbsp Fresh cilantro chopped
- 2 tsp Jalapeño pepper minced (optional)
- 1/2 tsp Honey
- 2 oz Tortilla chips
Instructions
- Place all ingredients into a bowl. Season with salt and pepper to taste. Refrigerate for 20 minutes before serving.
