Melt the butter in a non-stick pan or small skillet. Add in the apples, brown sugar, salt, lemon juice and cinnamon. Bring to a simmer and cook until the apples start to soften and the liquid is a deep golden brown (about 10 to 15 minutes). Remove from heat and set aside.
In the meantime, whisk the cream, powdered sugar, and vanilla by hand or using an electric mixer until the cream becomes firm.
