In a non-stick skillet over medium heat, cook the sausage patties until they are browned and cooked through according to the instructions on the package. Set aside on the croissant.
In the same skillet, melt a small amount of butter over medium heat.
Crack the eggs into the skillet and cook until the whites firm up then flip over and top with cheese. Cook for about 1 - 2 minutes until the cheese is melted. Season with salt and pepper to taste.
