Cook the sausage patty: Heat a nonstick pan on medium low heat. Once hot, cook the sausage patty for a few minutes per side to an internal temperature of 150° degrees.
Cook the eggs: Heat another nonstick pan on medium heat. Once hot, add the oil and crack the eggs into the pan being careful not to break the yolks. Cook until the whites of the eggs start to firm up, then add 1 to 2 tablespoons of water to the pan and cover with a lid. Cook until the whites are firm. Season with salt and pepper.
Toast the bread. Spread with butter then jam.
Serve: Enjoy the eggs with sausage, toast, and orange juice.
