Place the honeycomb cereal in a sealable plastic bag and lightly crush using a heavy pot or rolling pin. Set aside.
To make the waffle French toast, place eggs, milk, cinnamon and a pinch of salt flakes in a deep tray or pie dish and whisk to combine.
In batches, add waffles and stand for 5 seconds each side to soak (oversoaking will cause waffles to break up). Allow excess to drip off. Set aside on a plate.
Heat a pat of butter in a large frying pan over medium-high heat. Add the soaked waffles and cook for 2 minutes each side or until a deeper golden.
Place waffles on serving plates. Spread waffles with dulce de leche and top with sour cream. Scatter with crushed honeycomb cereal and a pinch of salt flakes.
Pour milk into glasses.
Enjoy the waffles with a glass of milk on the side.
