In a mixing bowl, whisk together eggs, pumpkin puree, milk, vanilla extract, cinnamon, nutmeg, ginger, and salt until well combined. This is your French toast batter.
Trim the crusts from the bread slices and cut them into sticks, about 1 inch wide.
Place a non-stick skillet or frying pan over medium heat and add 1 TBSP of butter. Let it melt and coat the pan evenly.
Arrange your serving plates, forks, and glasses for milk on the dining table. Place fresh fruit and maple syrup in serving bowls.
Dip each breadstick into the pumpkin batter, coating it well on all sides. Allow any excess batter to drip off.
