Pulled Chicken Sandwich

Ingredients

  • 1 pound Chicken breast boneless skinless
  • 1 teaspoon Extra-virgin olive oil
  • 1/4 cup onion finely chopped
  • 1/2 tablespoon brown sugar
  • 1/2 teaspoon Chili powder
  • 1/4 teaspoon Garlic powder
  • 1/4 teaspoon Dry mustard
  • 1/2 cup Ketchup
  • 1 tablespoon Apple cider vinegar

Remaining ingredients:

  • 4 rolls 6 inch
  • 1 pickle sliced into thin rounds

Instructions

  • Preheat oven to 375 degrees. To prepare chicken, combine spices, oil, ketchup, vinegar in a baking dish and mix well; add chicken and rub evenly over chicken. Cover tight with foil. Cook for 30 minutes. Let rest for 5 minutes. Shred pulling apart with 2 forks.
  • Toast whole wheat buns. Place shredded chicken on bun and top with pickle slices.
