Potato Hash

Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 2 cloves Garlic minced or grated
  • 1 tbsp Smoked paprika
  • 2 large Potatoes cut into small cubes
  • 1 tsp Lemon zest
  • 1 tbsp Lime juice or more if needed

Instructions

  • Preheat the oven to 375 degrees.
  • Combine all ingredients in a bowl. Season well with salt and pepper.
  • Place on a foil lined baking sheet. Cook in the oven until tender and golden brown, tossing the potatoes with a spatula occasionally.
  • Once done, season with salt and pepper to taste as needed.
