Pineapple Cake

Ingredients

  • Nonstick spray
  • 3/4 cup All-purpose flour
  • 1/4 cup Brown sugar
  • 1 tsp Baking powder
  • 1 Egg beaten
  • 2 tbsp Butter melted
  • 1 cup Pineapple minced, (optional - 1 slice per portion about 1/4 inch thick with the core removed)
  • 1 tsp Vanilla extract
  • 4 Maraschino cherries garnish (optional)

Instructions

  • Preheat oven to 350°F. Grease an appropriately sized baking vessel with nonstick spray (like a ramekin or muffin tin) based on the number of portions.
  • Combine flour, brown sugar, and baking powder in a bowl and mix well.
  • Stir in egg, butter, pineapple, and vanilla until very well mixed. Pour into prepared baking vessel. (Optional - top with a pineapple slice)
  • Bake 20-30 minutes or until a toothpick comes out clean. Do not overcook.
  • Let cool for about 15 minutes. Garnish with a cherry if desired.
