Preheat oven to 425°F. Line a baking sheet with parchment paper and set aside.
Toss the potatoes with the olive oil and season well with salt and pepper.
Spread the potato onto the baking sheet in a single layer so they aren't overlapping. Bake for about 15 to 20 minutes. Then turn them over and continue to bake for 10 to 15 minutes more or until golden brown and tender.
