In another bowl, whisk together mashed bananas, milk, vegetable oil, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix. Fold in the chopped nuts.
Divide the batter evenly among the muffin cups, filling each about two-thirds full.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
While the muffins are baking, brew and prepare the coffee according to your preference.
