Ingredients
Oatmeal Banana Nut Muffins:
- 1 cup Rolled oats
- ½ cup All-purpose flour
- ¼ cup Brown sugar packed
- 1 tsp Baking powder
- ½ tsp Baking soda
- ½ tsp Salt
- ½ tsp Ground cinnamon
- 2 Bananas mashed
- ½ cup Milk (of your choice)
- ¼ cup Vegetable oil or melted coconut oil
- 1 tsp Vanilla extract
- ½ cup Walnuts chopped
Coffee:
- Coffee
- Your choice of sweetener
- Your choice of creamer
Fruit:
- 1 cup Your choice of fruit (such as berries, sliced oranges, or grapes)
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups lightly.
- In a large mixing bowl, combine rolled oats, all-purpose flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon.
- In another bowl, whisk together mashed bananas, milk, vegetable oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix. Fold in the chopped nuts.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- While the muffins are baking, brew and prepare the coffee according to your preference.
- Wash and prepare the fresh fruits for serving.
- Once the muffins are baked and the coffee is ready, serve the warm oatmeal banana nut muffins with hot coffee and a side of fresh fruit.
