Ingredients

Oatmeal Banana Nut Muffins:

  • 1 cup Rolled oats
  • ½ cup All-purpose flour
  • ¼ cup Brown sugar packed
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • ½ tsp Salt
  • ½ tsp Ground cinnamon
  • 2 Bananas mashed
  • ½ cup Milk (of your choice)
  • ¼ cup Vegetable oil or melted coconut oil
  • 1 tsp Vanilla extract
  • ½ cup Walnuts chopped

Coffee:

  • Coffee
  • Your choice of sweetener
  • Your choice of creamer

Fruit:

  • 1 cup Your choice of fruit (such as berries, sliced oranges, or grapes)

Instructions

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups lightly.
  • In a large mixing bowl, combine rolled oats, all-purpose flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon.
  • In another bowl, whisk together mashed bananas, milk, vegetable oil, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix. Fold in the chopped nuts.
  • Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • While the muffins are baking, brew and prepare the coffee according to your preference.
  • Wash and prepare the fresh fruits for serving.
  • Once the muffins are baked and the coffee is ready, serve the warm oatmeal banana nut muffins with hot coffee and a side of fresh fruit.
