Mexican Rice

- 1 tbsp Extra-virgin olive oil
- 1/4 cup Onion chopped
- 1 tsp Garlic minced
- 1/2 cup Brown rice
- 1 cups Chicken broth
- 1/2 tsp Ground cumin
- 1 tbsp Tomato paste
Rinse the rice well and drain.
Heat oil in a saucepan over medium heat and add onion and garlic. Cook for 2 to 3 minutes. Add the rice, broth, cumin and season with salt and pepper.
Cook the rice according to the directions on the package. Whisk in the tomato paste. Season with salt and pepper to taste before serving.
