Mexican Rice

Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 1/4 cup Onion chopped
  • 1 tsp Garlic minced
  • 1/2 cup Brown rice
  • 1 cups Chicken broth
  • 1/2 tsp Ground cumin
  • 1 tbsp Tomato paste

Instructions

  • Rinse the rice well and drain.
  • Heat oil in a saucepan over medium heat and add onion and garlic. Cook for 2 to 3 minutes. Add the rice, broth, cumin and season with salt and pepper.
  • Cook the rice according to the directions on the package. Whisk in the tomato paste. Season with salt and pepper to taste before serving.
