Preheat oven to 400°F. Line a baking tray with parchment paper.
Make the chicken crust: In a bowl, mix ground chicken, oat flour, and garlic salt until combined. Press mixture into a thin, even round (pizza shape) on a baking tray.
Bake the crust for 15 minutes, or until firm and cooked through.
Heat olive oil in a skillet over medium heat. Sautée sliced bell pepper in olive oil until tender. Add oregano and cumin and sautée 30 seconds. Remove from heat.
Make the guacamole In a bowl, mash the avocado until smooth. Stir in cilantro, garlic, and lime juice. Season with salt to taste. Refrigerate until ready to serve.
Top the pizza: Spread salsa evenly over the pizza crust. Add sautéed fajita peppers, cheese, and black olives.
Final bake: Return the pizza to the oven and bake for 5 more minutes, until the cheese melts. Then drizzle with greek yogurt and chopped cilantro. Portion.
Prepare the lemon chia sparkling water: combine all the ingredients. Stir and let sit 2 - 3 minutes for the chia to bloom.
Serve the pizza with tortilla chips, guacamole and lemon chia sparkling water.
