Margarita Shrimp

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 12 Shrimp jumbo fully thawed, peeled and deveined tail off
  • 2 tbsp Red onion
  • 1/3 cup Green bell pepper diced small
  • 3 cloves Garlic roughly chopped
  • 2 tbsp Lime juice
  • 1/2 cup Chicken broth
  • 1/3 cup Grape tomatoes quartered
  • 1 tsp All-purpose flour whisked together in double the amount of water
  • 2 slices Crusty bread toasted or warmed as desired prior to serving
  • 1 tbsp Fresh cilantro chopped

Instructions

  • Heat a sauté pan on medium heat. Once hot, add the oil. Sear the shrimp on both sides, then remove from the pan and set aside.
  • Add the onion, peppers, garlic to the pan (use a little more oil if needed). Sauté until soft and starting to brown. Stir in the lime juice, broth, and tomato. Bring to a simmer to build flavor.
  • Once flavor builds, season with salt and pepper to taste. Add the shrimp back to the pan. Stir in the flour/water mixture a little at a time as need to thicken the sauce to a creamy consistency. Then remove from the heat.
  • Serve with bread. Garnish with cilantro.
