Lobster Salad

Ingredients

Grilled Corn

  • 2 ears Corn on the cob shucked
  • 2 tsp Butter

Lobster Salad

  • 1/4 cup Mayonnaise
  • 1 stalk Celery finely diced
  • 2 TBSP Lemon juice
  • 2 TBSP Fresh chives finely chopped plus more for serving
  • Salt
  • 12 oz Lobster meat
  • 1 head Romaine lettuce chopped
  • 1 Avocado sliced for serving
  • 2 wedges Lemon

Kombucha

  • 24 oz Kombucha cold

Instructions

  • Prep the ingredients per the instructions above.
  • Preheat a grill on medium heat. Grill the corn on all sides until nicely charred and tender. Once tender, lather with butter and lightly season with salt.
  • In a bowl, stir together mayonnaise, celery, lemon juice, and chives. Season with salt. Fold in chopped lobster meat.
  • Lay lettuce on a serving platter, then top with lobster salad. Garnish with avocado, more chives, and a squeeze of lemon.
  • Serve the salad with corn and kombucha.
