Prepare Marinade: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, ground cumin, paprika, ground cinnamon, salt, and black pepper. Mix well.
Add the lamb to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for more flavor.
Prepare Cucumber Water: Place the cucumber slices in the water and allow to infuse in the refrigerator until ready to serve. Serve over ice if desired.
Preheat an air fryer. Soak the fries in water for 10 minutes then drain. Add to the airfryer basket and cook for 20 - 22 minutes tossing about half way through until golden brown and crispy. Refer to the instructions in the air fryer manual.
Prepare Tzatziki Sauce: In a separate bowl, mix Greek yogurt, finely grated cucumber (make sure it's well-drained), minced garlic, lemon juice, chopped dill, salt, and black pepper. Refrigerate until ready to use.
Preheat Grill: Heat your grill to medium-high heat.
Grill the Lamb until nicely browned on each side. Remove from the grill and let rest for a few minutes.
Warm Pita Bread: While the lamb is resting, warm the pita bread on the grill for about 30 seconds per side, or until they are soft and slightly toasted.
Assemble Gyros: Slice the grilled lamb into bite-sized pieces and place on the pita bread. Top with shredded lettuce, tomatoes, red onion, and tzatziki sauce.
Serve the gyros with fries and ketchup and cucumber water.
