Ingredients

French Fries

  • 2 medium Potatoes cut the potatoes into ¼ inch thick sticks (about 1/2 lb of potato per portion)
  • 1/4 cup Ketchup

Cucumber Water

  • 8 slices Cucumber
  • 24 oz Water
  • Ice cubes

Lamb Marinade

  • 2 TBSP Extra-virgin olive oil
  • 2 TBSP Lemon juice
  • 2 cloves Garlic minced
  • 1 tsp Dried oregano
  • 1/2 tsp Ground cumin
  • 1/2 tsp Paprika
  • 1/4 tsp Ground cinnamon
  • Salt and pepper to taste
  • 8 oz Lamb loin or lamb shoulder cut into thin pieces

Tzatziki Sauce

  • 1/2 cup Greek yogurt
  • 1/4 Cucumber finely grated and drained
  • 1 clove Garlic minced
  • 1 TBSP Lemon juice
  • 1 TBSP Fresh dill chopped (or 1 tsp dried dill)
  • Salt to taste
  • Black pepper to taste

For Assembly

  • 2 Pita bread
  • 1 cup Romaine lettuce shredded
  • 1/2 cup Tomatoes sliced
  • 1/4 cup Red onion thinly sliced

Instructions

  • Prepare Marinade: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, ground cumin, paprika, ground cinnamon, salt, and black pepper. Mix well.
  • Add the lamb to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for more flavor.
  • Prepare Cucumber Water: Place the cucumber slices in the water and allow to infuse in the refrigerator until ready to serve. Serve over ice if desired.
  • Preheat an air fryer. Soak the fries in water for 10 minutes then drain. Add to the airfryer basket and cook for 20 - 22 minutes tossing about half way through until golden brown and crispy. Refer to the instructions in the air fryer manual.
  • Prepare Tzatziki Sauce: In a separate bowl, mix Greek yogurt, finely grated cucumber (make sure it's well-drained), minced garlic, lemon juice, chopped dill, salt, and black pepper. Refrigerate until ready to use.
  • Preheat Grill: Heat your grill to medium-high heat.
  • Grill the Lamb until nicely browned on each side. Remove from the grill and let rest for a few minutes.
  • Warm Pita Bread: While the lamb is resting, warm the pita bread on the grill for about 30 seconds per side, or until they are soft and slightly toasted.
  • Assemble Gyros: Slice the grilled lamb into bite-sized pieces and place on the pita bread. Top with shredded lettuce, tomatoes, red onion, and tzatziki sauce.
  • Serve the gyros with fries and ketchup and cucumber water.
