Kale Salad

Ingredients

  • 4 cups Kale chopped
  • 2 tbsp Walnuts
  • ½ cup Dried cherries
  • 2 tsp Goat cheese crumbled

Dressing

  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Honey

Instructions

  • Pull the kale leaves off from the tough stems and discard the stems. Chop the kale into small pieces and transfer to a big salad bowl. Sprinkle a small pinch of salt over the kale and massage the leaves with your hands by lightly scrunching big handfuls at a time, until the leaves are darker in color and fragrant.
  • Top the kale with walnuts, cherries, and goat cheese.
  • In a small bowl, whisk the dressing ingredients together and spoon the dressing over the salad.
