Prep the ingredients per the instructions above.
Prepare the Kale: Wash and dry the kale leaves. Remove the stems and chop the leaves into bite-sized pieces. In a large mixing bowl, add the kale leaves, olive oil, and salt and pepper. Massage the kale with your hands for a few minutes until it becomes tender and wilted.
Assemble the Wraps: Spread the hummus on each wrap. Divide kale, carrots, cucumber, red bell pepper, red onion, grape tomatoes, avocado, sunflower seeds, scallions, and feta onto each tortilla. Fold in the ends and roll up tight.
Make the lemonade: Mix all the ingredients for the lemonade. Serve over ice.
Drizzle hot sauce or sriracha over wraps. Cut in half and serve with chips, pickles, and homemade lemonade.
