Prep all ingredients as listed above.
Preheat the oven broiler on low.
To make the guacamole, mash the avocado in a bowl with a fork until smooth. Mix in red onion, lemon juice, and cilantro. Season with salt and pepper to taste. Refrigerate until ready to serve.
To make the beef, heat a nonstick pan over medium heat. Add ground beef, onion powder, cumin, garlic powder, paprika, and chili powder.
Break up the beef with a spatula and cook until it is no longer pink. Season with salt and pepper.
Place tortilla chips on a baking sheet. Spoon cooked beef over the chips and top with shredded cheeses and refried beans.
Broil until the cheese is fully melted.
Remove nachos from the oven and top with lettuce, tomato, jalapeño (if using), red onion, sour cream, and guacamole.
Serve with pumpkin beer.
