In a nonstick pan heat 1/2 of the oil over medium heat. Add in the potatoes, cook for 6- 8 minutes. Add in the pepper, onion, and chicken sausage and saute for 3 - 5 minutes. Season with salt and pepper to your desired taste. Toast the bread.
In a nonstick pan over medium heat add the rest of the oil. Crack the eggs into the pan and cook until the whites are set and firm, about 3 - 5 minutes. Serve with home fries, toast, and sliced plum.
